For the best result, to make the dish tasty and appetizing, remove the legs from the large, but not old, duck. To emphasize the aroma of the bird, you can use apples, grapes, quince. As a substitute for a special marinade for meat, these fruits, together with red wine and honey, will give the meat an exquisite flavor. For cooking, you will need a ceramic dish with high sides with a lid or foil.
Baked duck legs with apples recipe
Wash duck legs, dry in a towel. Rub the bird with salt, pepper and honey. Leave the duck at room temperature for 20-30 minutes.
Put the duck fat in the carcass itself into a baking dish.
Lay the legs on top of the fat, bake in the oven at 220 degrees for 40-60 minutes.
The duck legs should turn golden brown. The excess fat can be drained off.
Pour in a certain amount of red wine according to the ingredients list.
Cover the form with foil or a lid. Send the mold to the oven for 40 minutes. Cook at 180 degrees.
Peel the apples from the insides, cut into 4-6 pieces and put in a mold.
Add grapes. Cover the mold with foil again, place in the oven and continue cooking - 20-30 minutes at 180 degrees.
Turn off the oven and, without opening the door, leave the dish in the oven for another 10 minutes, after which you can take it out and then remove the foil.
Oven-baked duck legs can be served in the same form in which they were baked. Serve with bread, garnish with herbs.
