Italian biscotti biscuits

These amazingly delicious homemade cookies are perfectly combined with a cup of hot strong coffee or tea. Twice baked, they turn out to be pleasantly crispy, and stuffed with a variety of dried fruits, the pastries will gently caress your taste.

Biscotti with dried fruits

Ingredients: 250-300 g flour, 150 g sugar, 1 bag of vanilla sugar, 2-3 eggs, 1 teaspoon baking powder, 50 g dried apricots, 50 g dates, 50 g pistachios, 50 g almonds, Zest of 1 lemon

Cooking Recipe:

Rinse dried fruits and soak in boiling water for about 10-15 minutes. If they turn out to be more rigid, soak should be longer, until slightly softened.

Sift flour, add sugar, vanilla sugar, baking powder and mix. Then beat the eggs in another bowl, gradually stirring, pour into the flour mass and knead into a homogeneous and thick dough.

Soaked dried fruits, the composition of which can be supplemented at will, add to the mixture, also put the lemon zest and stir.

Put the mixture on a floured board, roll up into a long loaf or divide into two small loaves. Transfer to a greased baking sheet and bake in the oven for 20 minutes at 180 degrees.

Then remove the loaf, let the heat settle and cut longitudinally about 1 cm wide. Put the pieces back on the baking sheet and send to the oven. Bake for another 10-15 minutes, turn over in between.

Chocolate biscotti with hazelnuts

Ingredients: 200 g sugar, 2 eggs, 250 g flour, 1-2 tbsp. tablespoons of cocoa powder, 2 teaspoons of water, soda on the tip of a knife, 150 g whole hazelnuts

Thoroughly grind the sugar and eggs until a lush white color. Stir the sifted flour, cocoa powder, baking soda and portions into the egg mixture in a deep bowl, pour in a little water, stir until smooth.

Put the chocolate mass in parts on a well-sprinkled surface, roll out into a rectangle or square, lay out the hazelnuts peeled from the skin. Pressing the dough, roll it up.

Put baking paper on a baking sheet, transfer the chocolate roll and send to bake in a preheated oven for 20-25 minutes. Then remove, let cool for 5 minutes, cut into long diagonal slices, spread on a baking sheet and send back to the oven. Continue baking for another 15 minutes.

Also, hazelnuts can be immediately put on the dough and a few chopped pieces can be added, and only then roll the mass into a roll. When ready, let cool slightly.

The baked goods can be stored for a long time. In general, they are recommended to be consumed the next day. The process of making Biscotti does not require any special skill, it is simple and delicious!
