Lime-filled almond cookies

  • In a deep bowl, following our recipe, combine 4 egg whites, 120 grams of sugar, 1.5 teaspoons of vanillin, half a teaspoon of almond extract and a little salt. Add the coconut flakes listed in the ingredients and mix.
  • Next, place some foil on a baking sheet and sprinkle with a little flour, add 1 tbsp each. heaping spoons of the prepared coconut mixture leaving a distance, and in each, make a depression as shown in the photographs.

    Spread out the entire mixture and transfer the baking sheet to the preheated oven. Bake the cookies for no more than 10 minutes at 180 degrees, until the tips of the coconuts are lightly browned. Let cool. (see photo 2)

  • In a separate bowl, combine 100 grams of cream cheese, 200 ml of condensed milk, lime juice and zest, and add vanillin. Beat all this with a mixer until smooth. (see photo 3)

    Place one tablespoon of lime filling in each of the holes you made earlier so that it does not run off the surface.

  • Then garnish with cherries and refrigerate for a while, about 20-30 minutes, until completely cooled.

As you can see, it is not difficult to cook the lime filling, it is unnecessary to cook and beat for a long time. In general, making macaroons is quick and easy.
