First, let's talk a little about choosing the lentil itself, which, in general, is not required. Any kind is helpful. In our stores you can find several types: brown, green and less often red. Take any! Perhaps some kind is more, and which one is slightly less useful, but the mere presence of lentils is definitely useful.
Since we are preparing a healthy and nutritious soup, then the process, from small to large, should be perfect, and therefore, first of all, we will deal with tomatoes and peel them off in a simple way. To do this, make shallow cuts on the top of the tomatoes and dip them in boiling water for a couple of minutes.
Then, also dip it in cold water for 4-5 seconds. The peel of tomatoes "ruffle" from the temperature drop, and then you can easily separate them and cut them into small pieces.
Next, peel and rinse the onions, carrots, celery and cut into small cubes. Pour olive oil into a saucepan, heat up and add the last chopped food except tomatoes.
Add 2 teaspoons of salt, stir and cook over low heat until vegetables are slightly soft, about 5-6 minutes.
The next step is to lay out the main ingredient of our dish - lentils, after rinsing with water, and then add the previously chopped tomatoes.
Pour 2 liters of vegetable broth, add spices: black pepper, ground coriander and caraway seeds, so that the lentil soup will take on a delicate and pleasant taste.
Bring soup to a boil and reduce heat to low. For lentils to be fully cooked, it takes from 40 minutes to 1 hour, depending on the heat. Cook slowly and therefore, we will cook in medium - 50 minutes, until the lentils are cooked.
And the last step, part of the pulp must be poured into a blender and scrolled, and then put back into the pan, stirring to bring to the floor a thick state for another 5 minutes.
