Meatballs in creamy carrot sauce recipe

Meat dishes are very important in our diet. This time, we offer a popular recipe for meatballs with rice, which is why they are popularly called "hedgehogs". We will cook our delicious meatballs in the oven from minced meat in a creamy tomato sauce with stewed vegetables. The process is simple, but the result is excellent.

Whatever they call them: meatballs, meatballs, cutlets. It is more correct to call them "hedgehogs" because of the presence of rice in them, which in the process of readiness swell and slightly peep out of the minced meat like needles, resembling this cute creature.

Collect all the ingredients for the minced meat in one deep dish: minced meat, pre-cooked rice until half cooked, chopped onions, beat in one egg, salt and pepper. And to make the meatballs more juicy and tender, you should add half a glass of water

Kneading with hands, mix all ingredients thoroughly and combine evenly. Minced meat for meatballs is actually prepared in the same way as for cutlets, only in our case, add boiled rice for hedgehogs

Further, small balls should be formed from the finished minced meat. This can be done with a special device or in a proven "old-fashioned" way - with your hands, after wetting your palms in water so that the minced meat does not stick to your hands

Collect the prepared meatballs in one layer in an ovenproof dish for further baking. At the same time, try not to put them tightly.

As you can see, cooking them is not at all difficult and takes very little time. It remains only to make a universal gravy for meatballs, which goes well with many other dishes.

Creamy tomato sauce with vegetables

In a deep saucepan, melt the butter and, first of all, simmer the onion, cut into half rings, until the juice comes out of them

As soon as the onion becomes noticeably transparent, put the grated carrots, chopped garlic, add 1/2 teaspoon of salt, sprinkle with a little black pepper and continue sautéing until the carrots are soft, about 5 minutes

Then put the flour and stirring continuously, cook until the flour is completely combined with the vegetables.

Stir without stopping, add the tomato broth paste and combine. Next, gradually pour in all the broth. The result should be a creamy, semi-thick mass. Close the lid and cook for 15 minutes on low heat

Turn off the stove, add half a glass of cream and mix. To taste, you can pepper and salt a little more

Pour the prepared cream sauce into the meatball mold. It is better to do this with a spoon and gradually so as not to disrupt the arrangement of meatballs

Preheat the oven. Cover the surface of the mold with foil and bake for 45 minutes at 200 degrees.

As a result, the meatballs are tender and melt in your mouth thanks to the creamy gravy, and the vegetables make the dish tasty and nutritious.

Well, for a side dish, you can cook something from vegetables or, as in our case, mashed cauliflower, which is in perfect harmony with meatballs.

Recipe tip:

- for the best taste, when preparing the sauce, it is better to use homemade cream, which it is advisable to dilute immediately before adding in boiled warm water.

- for the preparation of minced meat, instead of beef and pork, you can use poultry or seafood, relying on your own taste and taking into account the preferences of the household. But at the same time, it is important to know that such meat must first be lightly fried in oil, and only then baked.

- also, for a change, grated cheese of good varieties can be added to the creamy meatball sauce, which will add spice to the dish, make it more interesting and aromatic.
