Mediterranean Vegetable Closed Pie Recipe

This is the simplest, but at the same time very tasty closed pie with an impressive view. Mediterranean royal pastries are huge, and the filling can be almost any, from sweet to meat. The variety of vegetables and cheeses, as well as tender and airy dough, is simply amazing.

Covered Vegetable and Cheese Pie Recipe

Dough preparation:

Dissolve yeast in warm water and sugar. Wait a few minutes until the fermentation process begins. The diluted yeast should swell. Combine yeast in a deep bowl with sour cream, butter, mix beforehand and add flour.

Knead a soft dough, cover the cup with a towel or plastic and transfer to a warm place for 1 hour, until the dough doubles in size or even more.

Creamy baking sauce:

In a small saucepan, melt the butter, add flour according to the recipe for the pie and stir. Then pour in fresh milk and bring to a light boil. Add salt on the tip of a knife, pepper and chopped garlic immediately. Stir for a few minutes until the mixture visibly thickens.

Remove from heat, add grated cheese and stir thoroughly. The result should be a smooth, semi-thick mixture.

Vegetable pie filling:

In a frying pan, in a small amount of oil, gradually fry the onion in stages, then the potatoes cut into small cubes, chopped tomatoes, cut olives and coarsely chopped spinach in the same pieces.

Season with salt and pepper. Simmer all vegetables over low heat, about 20 minutes. Remove from heat, add diced cheese and transfer cooked cream sauce, stir.

Cooking - Main Process:

Turn on the oven, set the temperature to 220C. In the meantime, while the oven is heating, roll out the dough that has come up to a size larger than the shape.

After rolling out the dough 6-8 cm thick, place it on a greased round dish and put the filling there.

Pull the protruding edges of the dough towards the center and squeeze tightly. The excess can be cut off.

Grease the surface of the cake with butter, then sprinkle with dry herbs, it can be oregano, dill, a little ground black pepper. Transfer the formed closed cake to the hot oven.

Bake on the middle rack of the oven for 30-40 minutes, until the covered cake is lightly browned.
