Filled potatoes in the oven
Turn on the oven, set the temperature to 200 degrees. Rinse potato tubers and dry with a tissue. The skin of the potato must be dry, this is the only way it will brown properly and become crispy. The surface of the potatoes must be grated with a little olive oil and salt. Then put in the oven for about one hour.
Until the potatoes are ready, in about half an hour, put the unpeeled garlic cloves on a sheet of foil, add a little salt and pepper, add a small amount of butter and one tablespoon of olive oil. Roll up the foil and place in the oven with the potatoes.
While the dish is cooking in the oven, cut the bacon slices into small pieces and fry for a short time in a preheated pan, without oil.
When ready, remove the potatoes from the oven and cool. Then, with a sharp knife, cut them in half lengthwise. After that, trying not to damage the peel, separate the pulp with a spoon and transfer it separately.
Combine the inside of the potato with peeled baked garlic. Add sour cream, some olive oil, finely chopped herbs, bacon, grated cheese (leave some cheese for sprinkling) and stir so that the mixture does not turn into puree.
Fill each baked potato with filling, as needed.
Place cubes of butter on top and sprinkle with the remaining cheese.
Send the potatoes back to the oven and bake until the surface of the filling is lightly crusty and lightly browned, about 10 minutes.
Potatoes, like other vegetables, lose some of their nutrients during cooking, only baked potatoes in their skins retain most of them.
