We are used to seeing pea soup thick from ripe fruits, like in kindergarten, slightly boiled or even in the form of mashed potatoes, as a hearty dinner that can replace the second. But there are many other options and methods that are not inferior to the classic taste. As an alternative, we offer a recipe for pea soup made from young and green fruits, which we affectionately call peas.
As you may have noticed, turmeric is present in the recipe. - What does it give us and why do we need it in soup with meatballs and peas? And is it possible without it at all? - Yes, you certainly may! Just keep in mind that turmeric soup acquires a brighter and richer taste, the dish becomes healthy and dietary. Turmeric is an irreplaceable spice that enhances the properties of vegetables and makes them more aromatic.
How to make a delicious soup with green peas and meatballs
Chop the meat and onions through a meat grinder, mix with salt, black pepper and herbs.
Form the minced meat into round and small meatballs.
Cut the onion into small cubes, fry in a little oil, add the turmeric and stir.
As soon as the onion starts to juice, add the frozen green peas to it.
Pour in just over a liter of hot broth and bring to a boil.
Next, in boiling pea soup, lower the meatballs, reduce the heat and continue cooking with slow simmering - 10 minutes.
At the end of cooking, add finely chopped parsley, salt a little, stir and turn off the heat.
Serve ready-made pea soup with meatballs hot, pouring into portioned plates, sprinkle with chopped fresh green onions.
- It is not recommended to defrost frozen green peas before cooking. For frying, it is better to immediately lower it into boiling water, and for soup - directly into the broth, it will be much tastier and more vitamins are stored in the peas.
- The standard cooking time from the moment the water boils is 5-8 minutes, depending on the size of the beans and their quality.
- It is better to cook minced meat for meatballs at home using two types of meat. The best meat for meatballs is lamb or beef.
- For the viscosity of the minced meat, so that the product does not disintegrate in the soup, you can add one egg, and also cook meatballs with rice.
