Eggplant salad

An easy to prepare and delicious eggplant salad that can be easily prepared at home. Add some vinegar if desired.

Cooking time 30 minutes


Eggplant 2 pcs

Tomato 2 pcs

Bell pepper 1-2 pcs

Garlic clove 2 pcs

Parsley (greens) 1 bunch

Vegetable oil 5 tbsp. l.

Salt 1/2 tsp

Pepper to taste


Rinse and dry the eggplants.

Cut the eggplants into half rings and fry in vegetable oil in a frying pan for 12-15 minutes, stirring occasionally.

Cut the tomatoes and bell peppers into slices.

Season the prepared eggplants with salt and pepper.

Add tomatoes and bell peppers to the eggplant pan.

Add chopped garlic and herbs. Mix.

Put on a dish.

Eggplant salad is ready. Can be served at the table.
