Fried champignons with onions in a pan recipe
Start by preparing the mushrooms. Buy fresh champignons with white caps, without signs of spoilage and mechanical damage. Transfer to a colander and rinse each mushroom thoroughly. If the mushrooms have stayed in the refrigerator for a couple of days and the skin has darkened slightly, remove it. She acts very well.
Cut the small mushrooms into 4 pieces and the larger ones into 5-6 pieces. Optionally, you can cut into slices, not very thin.
Set a suitable skillet over high heat. Pour in odorless oil. Heat well. Move the sliced mushrooms.
Fry over high heat, stirring occasionally, until liquid appears. Continue frying in the same mode until the resulting juice evaporates.
Meanwhile, peel the onion. Rinse well and pat dry with a paper towel. Cut into small pieces. Add to skillet. Stir. Cook over high heat until golden brown, stirring with a wooden spatula. This process takes 4-5 minutes.
Add salt and freshly ground black pepper to taste. Stir. Fry for another 1-2 minutes and turn off the burner flame.
