Eggplant 3 pcs
Onion 3 pcs
Tomatoes 3 pcs
Vegetable oil 100 ml
Sugar (sand) 1 tbsp. l.
Salt 1, 5 tsp

Vinegar 9% 2 tbsp. l.
Rinse the eggplants well, remove the tails. Peel the onion.
Fry coarsely chopped onions in a deep frying pan in vegetable oil.
Add the diced eggplant.
Simmer covered over medium heat for 20 minutes.
Cut the tomatoes into slices.
Add the tomatoes to the skillet and cook for another 20 minutes.
Cool the prepared vegetable mass a little.
Transfer to a saucepan, add salt, ground pepper and sugar.
Punch with a blender into a homogeneous mass.
Pass through a sieve.
Put on fire and bring to a boil, add vinegar and stir.
Arrange in jars and twist. Leave to cool under the covers overnight.
