Vegetable caviar for the winter, this is an all-time snack, the friendship of zucchini and eggplant.

Eggplant 2-3 pcs

Zucchini 2 pcs

Carrots 2-3 pcs

Onion 2 pcs

Bell pepper 2 pcs

Vegetable oil 100 ml

Tomato paste 100 g

Garlic clove 3-4 pcs

Vinegar 6% 20 ml

Sugar 3 tbsp. l.

Salt 2 tbsp l.

Ground black pepper 1/2 tsp.


Cut the eggplants and peppers into slices.

Peel and chop the courgettes and carrots.

Twist eggplants, peppers, carrots, zucchini and onions in a meat grinder.

Add vegetable oil, salt, sugar and tomato paste.

Stir and cook over medium heat for 40-45 minutes, stirring occasionally.

Add ground black pepper, pressed garlic and vinegar to the prepared caviar.

Stir, cook for another 3-5 minutes. Arrange in clean and dry jars and roll up the lids.

Vegetable caviar for the winter "Druzhba" is ready. Store in a cool place.
