Eggplant like mushrooms

Eggplants are like mushrooms, it is a delicious aromatic eggplant for the winter that tastes like mushrooms. An excellent appetizer for any festive table.

Cooking time 30 minutes


Eggplant 1 kg

Bulb onions 200 g

Vegetable oil 30 ml

Vinegar 9% 2 tbsp. l.

Salt 1 tsp

Parsley (greens) 1 bunch

Garlic clove 2-3 pcs


Rinse the eggplants, peel the onions.

Cut eggplants into strips, onion in half rings, put in a frying pan with vegetable oil.

Cook, stirring occasionally, for 12-15 minutes.

Add salt, finely chopped parsley and pressed garlic. Stir and add vinegar.

Arrange in clean jars and seal.

Eggplants are ready like mushrooms. Put in a warm place until it cools completely. Store in a cellar or cool place.
