Eggplant "Ogonyok" for the winter

Eggplant "Ogonyok" is a spicy eggplant appetizer with tomato filling, especially for spicy food lovers.

Eggplant 1 kg

Tomato 1 kg

Bulgarian pepper 1 kg

Hot pepper 2-3 pcs

Head of garlic 1 pc

Salt 1 tbsp l.

Vinegar 9% (for three 0.5 cans) 3 tsp.

Frying oil 5-7 tbsp. l.


Rinse and dry the eggplants.

Cut the eggplants into slices.

Fry in vegetable oil on both sides.

Rinse and peel bell peppers, rinse tomatoes and hot peppers, peel garlic.

First, mince the bell peppers and tomatoes. Then hot pepper and garlic.

Add salt.

Layer eggplant circles with filling in layers in clean jars.

Pour fill over the top of the cans. Add 1 teaspoon of vinegar.

Cover and sterilize for 10 minutes (0.5 liter jars after boiling).

Roll up the lids and put in a warm place overnight.

Eggplant "Ogonyok" is ready for the winter. Store the finished snack in the cellar.
