Delicate pie with berries and curd cream is a real hit of the summer! Your sweet tooth will be delighted!
Cooking time 1 hour
Mix 400 grams of curd cheese and 100 grams of powdered sugar.
Beat with a mixer for 3-4 minutes. Remove the cream in the refrigerator for 30 minutes.
Put 100 grams of soft butter in a large bowl, add 100 grams of sugar.
Add 1 egg and 1 pinch of salt, beat with a mixer for 1-2 minutes.
Mix well with a spoon.
Use your hands to gather the dough into a ball so that the sides of the bowl are completely clean.
Wrap the finished dough in a bag. Refrigerate for 15 minutes.
Cover the table with a small piece of parchment and lay out the shortcrust pastry for the pie.
Cover with a pre-cut parchment circle, with a diameter under the bottom of the form and roll out the dough between two sheets of parchment, going 2-2.5 centimeters outside the circle.
Turn over in a circle and place in a mold. Fasten the sides and remove the parchment sheet.
Use a knife to cut off the excess dough on the sides and arrange them with an even edge. Refrigerate for 20 minutes.
Make punctures with a fork in a circle.
Place a sheet of parchment on top and cover with 1 cup of peas, beans or rice.
Bake in an oven preheated to 180 degrees C for 15 minutes.
Remove peas with parchment.
Bake for another 10-12 minutes.
Cool the finished sand base.
Remove the base from the mold and transfer to a dish.
Fill the sand base with cream and smooth well.
Decorate with berries and mint leaves.
