Summer cake

A simple summer pineapple cake recipe is perfect for any occasion. Delight your loved ones with a delicious dessert.

Cooking time 40 minutes


Eggs 4 pcs

Sugar 100 g

Wheat flour of the highest grade 150 g

Salt 1 pinch.

Baking powder 1/4 tsp.

Butter 10 g

Breadcrumbs 1 tbsp l.

Gelatin (for filling) 40 g

Sugar (for filling) 100 g

Cream 35% fat. (for filling) 300 ml

Lemon (for filling) 1 pc

Canned pineapple (for decoration) 1 ban.

Cherry (for decoration) 10 pcs

Cake Jelly (optional) 1 pack


Beat eggs with sugar until dense foam.

Add flour, salt and baking powder. Beat with a mixer until smooth.

Grease a mold with butter and sprinkle with breadcrumbs. Pour out the dough. Bake in a preheated 180 degrees C oven for 20-25 minutes. Willingness to check with a toothpick.

Soak gelatin in 1/2 cup of cold boiled water for 20-30 minutes.

Whisk the cream into a froth with sugar. Heat gelatin and pour into cream, add lemon zest. Mix well.

Cool the cake. Cut off the top of the crust and soak in pineapple syrup. Put the cream on top of the cake and smooth. Refrigerate for 2-3 hours. Garnish with pineapples and cherries on top.

If desired, pour a little gelatin syrup on top. Refrigerate for another 1 hour.

Remove the mold and cut into portions. Serve to the table.
