Pancakes with cottage cheese and dried apricots

Eggs 1 pc

Milk 3.2% fat. 300 pcs

Vegetable oil 2 tbsp. l.

Sugar 2 tbsp. l.

Wheat flour of the highest grade 100 g

Salt 1 pinch.

Dried apricots (for filling) 100 g

Cottage cheese (for filling) 200 g

Sugar (for filling) 2 tbsp. l.

Eggs (for filling) 1 pc

Butter (for frying) 20 g


Beat the egg.

Add milk and vegetable oil.

Add sugar, salt and flour, mix well. Let the dough rest for 10-15 minutes.

Bake pancakes in a hot skillet on both sides.

For the filling, soak dried apricots in boiling water for 20-30 minutes. Drain the water, dry the dried apricots.

In a bowl, combine cottage cheese, egg and sugar.

Add chopped dried apricots and mix well.

Place the filling over the pancakes.

Wrap in envelopes.

Heat the butter in a frying pan. Place the pancakes and fry on both sides.

Place on a plate and serve.
