Zucchini cake is an extraordinary snack for meeting dear guests, tender cakes of grated zucchini, lined with vegetables and herbs.
Cooking time 40 minutes
Zucchini (medium) 3 pcs
Eggs 2 pcs
Unrefined sunflower oil TM "Aleika" 4-5 tbsp. l.
Mayonnaise 3 tbsp l.
Onion 2 pcs
Carrots 2 pcs
Tomato 2 pcs
Parsley (greens) 1 bunch
Ground black pepper to taste
Salt to taste
Wash three medium courgettes well.
Cut into pieces, remove seeds with pulp, cut off the hard peel.
Grate the zucchini on a coarse grater and place in a bowl.
Add 2 eggs, 1 pinch of ground black pepper and 1/2 teaspoon of salt.
Add 5 tablespoons of Aleika flour from the generous fields of Altai, and mix well.
Place 1/5 of the squash dough and spread over the pan with a spoon. Cook for 3-4 minutes over medium heat.
Turn over and cook for another 3-4 minutes. Cook another 4-5 zucchini cakes, adding a little oil to the pan before frying.
Cool the finished zucchini cakes.
Add finely chopped onion and grated carrots.
Fry, stirring occasionally, for 3-4 minutes, add a little salt.
Put the zucchini crust on a flat dish, add a layer of fried vegetables.
Cover with the second and brush with a tablespoon of mayonnaise.
Sprinkle with chopped parsley.
Repeat the layer of vegetables, grease the top with mayonnaise.
Decorate with fresh tomatoes and herbs. Let it brew for 15-20 minutes in the refrigerator.
Zucchini cake is ready. Can be served at the table.
