Sort out the collected fresh chanterelles from dirt and foliage.
Rinse the mushrooms well.
Cut the chanterelle slices. Fry the mushrooms in a pan with vegetable oil for 5-7 minutes, stirring occasionally.
Add finely chopped onion. Fry for another 3-5 minutes.
Peel the potatoes and cut into small slices. Dip the potatoes in boiling water for 10 minutes.
Add semi-boiled potatoes to mushrooms and fry until the potatoes are tender.
Salt to taste. Place on a serving dish and sprinkle with finely chopped parsley. Fried chanterelles with potatoes are ready. Can be served at the table.
