An original appetizer of pancakes with tomatoes, mozzarella and olives will pleasantly surprise your guests.
Cooking time 20 minutes
Eggs 2 pcs
Kefir 2.5% fat. 200 g
Sugar 1/2 tsp
Baking powder 1 tsp.
Wheat flour of the highest grade 150-200 g
Mozzarella 200 g
Pickled green olives 100 g
Cherry tomatoes 5-7 pcs
Salt to taste
Beat eggs in a bowl, add warm kefir, sugar, salt.
Mix flour and baking powder separately and add to a bowl. You mix with a whisk until smooth.
Put the dough in a hot pan with vegetable oil, a teaspoon.
Fry on both sides.
Cool the finished pancakes on paper towels.
Arrange the pancakes in one layer and lay the halves of the cherry tomatoes on top.
Top with an olive and a slice of mozzarella. Prick with a skewer with olive.
Sprinkle with finely chopped dill. Decorate with sprigs of parsley. Serve to the table.
