Minced meat 300 g
Hard cheese 100 g
Eggplant (medium) 2 pcs
Unrefined sunflower oil TM "Aleika" 3 tbsp. l.
Tomato paste 2 tbsp l.
Onion 1 pc
Salt 1/2 tsp
Ground black pepper 1 pinch.
Parsley (greens) 1-2 branches.
Rinse and dry 2 eggplants.
Cut into halves.
Make cross cuts.
Remove the pulp with a spoon.
Put out 300 grams of minced meat.
Fry for 2-3 minutes, stirring occasionally.
Add finely chopped onion, cook for 1-2 minutes.
Add finely chopped eggplant pulp, 2 tablespoons of tomato paste, 1/2 teaspoon of salt and 1 pinch of ground black pepper.
Fry, stirring occasionally, for 2-3 minutes.
Stuff the eggplant “boats” with the filling and place on a baking sheet covered with foil.
Sprinkle with grated cheese.
Bake in the oven at 200 degrees C for 12-15 minutes.
Remove from oven and cool slightly.
