Fry finely chopped onions and grated carrots in vegetable oil for 2-3 minutes.
Add the courgettes, cut into small slices.
Stir, add pepper, cut into small pieces, to the pan.
Cut the tomatoes into cubes and add to the cooking vegetables.
Mix everything well, salt and pepper. Simmer for another 5-7 minutes. Add chopped garlic and herbs. Stir and place in a serving dish.
Serve as a stand-alone dish or garnish with pasta.
