Wash and dry the shins well.
Cut the meat out of the legs and chop off the bone just above the base without damaging the skin. Cut the meat into small cubes.
Finely chop the olives and peppers.
Fry the peppers and olives in vegetable oil, adding 1/2 clove of finely chopped garlic.
Mix vegetables with chicken meat.
Stuff the chicken skin with this mixture. Bake in the oven for about 15 minutes at 200C, greasing the container and drumsticks with oil.
Serve the dish garnished with lettuce leaves, chives and finely diced bell pepper.
