An easy-to-prepare, mouth-watering charcoal grilled fish is a great alternative to traditional meat dishes at a picnic.

Rinse the fish well. Remove entrails and gills, rinse and dry again.
Rub inside and out with salt and paprika. Put the fish carcass on a skewer from the tail to the head closer to the ridge.
Heat up the coals. Fry the fish, turning, about 20 minutes until tender.
