Beans with vegetables, another delicious recipe to spice up your lean menu.
Cooking time 50 minutes
Red beans 200 g
Onion 1 pc
Bell pepper 1 pc
Tomatoes 1 pc
Vegetable oil 2 tbsp. l.
Parsley (greens) 1 bunch
Olive oil 1 tbsp l.
Salt to taste
Pepper to taste
Soak the beans in cold water for 6-8 hours.
Rinse beans, add water and cook. Drain off excess water, leave to cover the finished beans.
Mash half the beans with a crush together with water.
In a frying pan with vegetable oil, fry finely chopped onions and diced peppers.
Add the refried vegetables and the diced tomato to the other half of the beans. Season with salt and pepper.
Put on plates. Sprinkle with finely chopped parsley and pour over with olive oil.
