Fragrant eggplant

Fragrant eggplant, an appetizing snack that you will want to cook all the time, and all your neighbors will gather for the smell.

Cooking time 40 minutes


Eggplant 2-3 pcs

Tomatoes 2 pcs

Bell pepper 1 pc

Bryndza 100 g

Parsley (greens) 1 bunch

Lemon basil greens 1 sprig

Olive oil to taste

Salt to taste


Cut the tomatoes into slices.

Fry in olive oil.

Arrange in the first layer and sprinkle with parsley on top.

Cut the eggplants lengthwise, add salt and leave for 30 minutes, fry and lay out in a second layer, sprinkle with herbs.

Cut the bell pepper into rings and fry.

Place on top of the eggplant.

Decorate with herbs and small pieces of feta cheese.
