Rinse and peel the meat, sprinkle with rosemary leaves and black pepper and leave in the refrigerator overnight.
Before cooking, remove the old rosemary from the meat, cut into flat slices, beat off, salt and sprinkle with fresh rosemary leaves. Pour sesame seeds into separate plates and break an egg. Dip each piece in an egg, dip in sesame seeds and fry in a pan for 5 minutes on each side, until the sesame seeds appear golden brown.
Serve with fresh herbs or vegetable salad.
