Eggplant boats with minced meat

Minced meat (pork and beef) 300 g

Hard cheese 150 g

Eggplant 2-3 pcs

Tomato 2-3 pcs

Onion 1 pc

Unrefined sunflower oil TM "Aleika" 3-4 tbsp. l.

Mayonnaise 1 tsp

Provencal herbs 1/2 tsp

Salt 1/2 tsp

Ground black pepper to taste


Defrost the minced meat, peel the onion.

Add finely chopped onions. Cook for another 3-4 minutes.

Add Provencal herbs, salt and ground black pepper to taste. Stir and remove from heat.

Rinse and dry the eggplants.

Cut the eggplants into halves. Take out a little pulp with seeds.

Put the eggplant boats on a baking sheet covered with parchment. Put the minced meat filling inside the eggplant.

Add some mayonnaise on top of the meat filling.

Arrange the sliced ​​tomatoes.

Sprinkle with grated cheese on top.

Bake in an oven preheated to 180 degrees C for 15-20 minutes.
