Vegetable stew with provencal herbs

Stew has the magical property to wrap up in warmth and enjoy a portion of a fragrant vegetable dish that brings fond memories of pleasant moments.

Cooking time 25 minutes


Potatoes 2-3 pcs

Carrot 1 pc

Bell pepper 1 pc

Onion 1 pc

Tomatoes 1 pc

Olive oil 2-3 tbsp. l.

Dried Provencal herbs 1/2 tsp

Salt to taste


Peel potatoes, onions and carrots. Wash the pepper and tomato well, defrost the beans.

Heat olive oil in a frying pan and dice the chopped onions and coarsely chopped carrots.

Add diced bell peppers and beans.

Add coarsely chopped potatoes, salt and Provencal herbs. Add 1/2 cup water and simmer, covered for 10-12 minutes, over medium heat.

Add the diced skinless tomato. Cook for another 2-3 minutes.

Stir the stew.

Vegetable stew with Provencal herbs is ready. Put on a platter, garnish with chopped green onions and serve.
